Pasta Primavera Recipe

Ingredients:

  • 250g Foodea Penne Pasta
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 small Onion, finely chopped
  • 1 small Zucchini, diced
  • 1 small Bell Pepper (any color), diced
  • 1 small Carrot, julienned
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Green Peas
  • 1/2 cup Heavy Cream
  • 1/2 cup Grated Parmesan Cheese
  • 2 tablespoons Fresh Basil, chopped
  • Salt and Pepper, to taste

Instructions:

  1. Cook the Foodea Penne Pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the Olive Oil over medium heat. Add the Garlic and Onion, and sauté until they become soft and translucent.

  3. Add the Zucchini, Bell Pepper, and Carrot to the skillet. Sauté for about 5 minutes until the vegetables start to soften.

  4. Stir in the Cherry Tomatoes and Green Peas. Cook for an additional 2-3 minutes until the tomatoes start to release their juices.

  5. Pour in the Heavy Cream and bring the mixture to a gentle simmer. Let it cook for a few minutes until it thickens slightly.

  6. Add the cooked Foodea Penne Pasta to the skillet and toss to coat it in the creamy vegetable sauce.

  7. Stir in the grated Foodea Parmesan Cheese and Fresh Basil. Season with salt and pepper to taste.

  8. Serve the Pasta Primavera hot, garnished with extra grated Parmesan cheese and fresh basil.
